Chicken Avocado Enchiladas

Oh my goodness, these are so good. This is not my recipe and the only thing I did differently was to add some halved grape tomatoes, substitute chicken for turkey and pepperjack cheese for cheddar in half of the enchiladas, so I'm not trying to pass this off as my own in any way, but you simply MUST TRY IT!

I made this for the family and my mother and 'aunt' and everyone loved it. I paired it with a spanish rice recipe that is basically my grandmother's (I didn't follow exact measurements, but I watched her make it once and added the same ingredients she did, so she gets the credit).  We also had a yummy green salad with an easy and delicious balsamic vinaigrette that I found on Pinterest and a fruit salad with delicious fruits that happened to be on sale (or homegrown) this week: oranges, blackberries, and fuji apples.

Sorry for the terrible pictures and the less than cute serving style.  It was a simple family dinner that I did not intend to share until we tasted it and it came out of the oven and smelled DELICIOUS.  I snapped a couple quick pics so that I would have something to share even if it was mediocre pictures.  You get the general idea.  Go follow that link and make some!  MMMmmmmm!
